Mom's Famous VinaigretteFrom the Kitchen of: Jeanne (my mom!)
Added on: 6/10/2011 Yields: ~ 1 cup Ingredients: 1/4 cup vinegar (white/red wine, balsamic, white balsamic) or lemon juice 1 Tbsp mayo 1 Tbsp dijon mustard 1 clove garlic chopped 1 Tbsp chopped shallot (optional) 1/4 cup chopped herbs (basil, parsley, cilantro, chives, thyme, oregano) 3/4 cup EVOO |
Directions: 1. Using an immersion blender: add vinegar, mayo, mustard, garlic, shallots and herbs - process until smooth. 2. While the blender is running, slowly stream in the EVOO. Voila! **STORE IN THE REFRIGERATOR** |
Orzo Spinach SaladFrom the Kitchen of: Jeanne (my mom!)
Added on: 6/10/2011 Yields: 6-8 servings Ingredients: 1/2 lb orzo pasta, cooked & drained 3-4 cups baby spinach, coarsely chopped 1/4 cup "Mom's Famous Vinaigrette" 3 oz crumbled Feta cheese 1/3 cup kalamata olives, roughly chopped salt & pepper to taste |
Directions: 1. Add hot pasta to spinach and toss gently. 2. Add vinaigrette and toss again. 3. Add olives, cheese, and (yup, you guessed it) toss! 4. Add your salt and pepper as desired (and more dressing if you feel it's a little too dry). Delicious served at room temperature (slightly warm) or chilled! |
